Barefoot Contessa Pasta Fagioli is an Italian recipe made in a unique way of cooking pasta in vegetable soup and then topping it up with yummy toppings. I do not add any of the cream ingredients in this recipe and love a lot of cheese at the top of this pasta. Cheese on soup is also a good combo which I discovered when I first tried this recipe.

INGREDIENTS

  • 1 tablespoon dried oregano
  • 1 lb lean ground beef
  • 3 (8 oz) cans of tomato sauce
  • 3/4 tablespoon dried thyme
  • 2 tablespoon olive oil
  • 1/2 tablespoon dried Marjoram
  • 1 (15 oz) can of diced tomatoes
  • 1 1/2 cups chopped Yellow Onion
  • 1 cup diced Carrots
  • 3 minced garlic cloves
  • 2 tablespoons granulated sugar
  • 2 (14.4 oz) cans of chicken broth
  • 1 cup diced celery
  • 1/2 cup water
  • 1 1/2 tablespoons dried basil
  • Freshly shredded Parmesan Cheese
  • 3 tablespoons minced fresh parsley
  • 1 can dark red kidney beans
  • 1 (15 oz) can of great northern beans
  • Salt and freshly grounded black pepper
  • 1 cup dry ditalini pasta

Method to make Barefoot Contessa Pasta Fagioli

Put a large-sized pot on the stovetop and heat olive oil in it. Add the beef to the heating oil and stir-fry it.

Put the beef on a side plate and also dispose of the fats from the pan.

Add more oil to the pan and then you have to add vegetables into the pan.

Bring the diced vegetables including the celery, carrots, and then onions, and add to the pot. Stir fry the veggies.

Pour the chicken broth into the pot and also add tomato sauce into it. Pour some water.

Bring the canned tomatoes and add them to the cooking mixture. Sprinkle sugar and basil followed by the sprinkling of thyme and oregano.

Add marjoram at the end and also add the cooked beef to the pot. Add the seasonings.

Boil the mixture and then let it simmer for 10-20 minutes.

Cook the pasta according to the package directions. Bring the cooked pasta and add it to the cooked soup. Add some beans and stir.

Simmer a little more, sprinkle a lot of cheese and parsley, and then serve the dish.
