- 2 pounds large shrimp, peeled and deveined
- 1 1/2 pounds linguine
- Vegetable oil
- Kosher salt
- 6 tablespoons unsalted butter
- 5 tablespoons good olive oil
- 3 tablespoons minced garlic
- 1/2 teaspoon freshly ground black pepper
- 3/4 cup chopped fresh parsley
- Grated zest of 1 lemon
- 1/2 cup freshly squeezed lemon juice
- 1/2 lemon, thinly sliced in half-rounds
- 1/4 teaspoon hot red pepper flakes
How to make shrimp scampi
Boil salted water in a large pot, drizzle some oil, add 1 tablespoon of salt and linguine pasta and cook for 7 to 10 minutes or according to the package instructions.
While the pasta is cooking, melt butter and olive oil over medium heat in a large, heavy-bottomed pan. Sauté garlic for 1 minute. Add shrimp, 1 tablespoon salt and pepper and sauté for 5 minutes until shrimp have turned pink.
Remove from the heat and add parsley, lemon juice, lemon zest, lemon slices, and red pepper flakes. Combine well.
When the pasta is boiled, drain and put it back to pot. Immediately add shrimp with sauce, mix them to combine and serve!
