Barefoot Contessa Shrimp Scampi

Ingredients

  • 2 pounds large shrimp, peeled and deveined
  • 1 1/2 pounds linguine
  • Vegetable oil
  • Kosher salt
  • 6 tablespoons unsalted butter
  • 5 tablespoons good olive oil
  • 3 tablespoons minced garlic
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 cup chopped fresh parsley
  • Grated zest of 1 lemon
  • 1/2 cup freshly squeezed lemon juice
  • 1/2 lemon, thinly sliced in half-rounds
  • 1/4 teaspoon hot red pepper flakes

Instructions

  • Boil salted water in a large pot, drizzle some oil, add 1 tablespoon of salt and linguine pasta and cook for 7 to 10 minutes or according to the package instructions.
  • While the pasta is cooking, melt butter and olive oil over medium heat in a large, heavy-bottomed pan. Sauté garlic for 1 minute. Add shrimp,1 tablespoon salt and pepper and sauté for 5 minutes until shrimp have turnedpink.
  • Remove from the heat and add parsley, lemon juice, lemon zest, lemon slices, and red pepper flakes. Combine well.
  • When the pasta is boiled, drain and put it back to pot. Immediately add shrimp with sauce, mix them to combine and serve!
