- 2 cups fresh blueberries
- 1/2 cup sugar
- 1 tbsp lemon juice
- 2 tbsp corn starch
- 1 tbsp cold water
For the crust of the cake
- 1 cup graham cracker crumbs
- 2 tbsp sugar
- 3 tbsp melted butter
For filling of the cake
- 1 cup sour cream
- 2 tbsp all-purpose flour
- 1 cup sugar
- 3 packages softened cream cheese
- 2 tbsp vanilla essence
- 4 large eggs
Steps to make a yummy blueberry cheesecake?
- First, perform the basic step to preheat your oven at 350 degrees.
- Bring a small pan, add in blueberries. Combine your blueberries with sugar and lemon juice.
- Cook after stirring. Make sure the berries are softened.
- Make a smooth paste by mixing cornstarch with water. Mix this paste with your berry mixture.
- Cook until the mixture gets thickened.
- After cooling for some time, blend the cooked berry mixture in the blender until it gets smooth.
- To make the crust of your cake, take a container and mix the crumbs with sugar and butter. Grease the pan and fill it with the mixture. Bake the crust for at least 10-12 minutes. Let it cool.
- Take a large glass bowl and add cream cheese and sugar to it. Beat the mixture until it attains a smooth texture. Also mix sour cream, flour, and vanilla with the material. Beat the eggs with this entire mixture at low speed.
- Pour the filling of your baked crust into the baking pan. Ice with a few tablespoons of berry mixture.
- Bake your cake for 45 minutes or more if needed. Pass a knife around the edges of the pan to allow it to loosen a bit.
