Gluten Free Mooncake Recipe

The Gluten-Free Mooncakes recipe is my most followed mooncake recipe out of all the gluten-free recipes. I find this recipe super therapeutic as it includes the air frying of the mooncakes first and then steaming them.

Glutenfree Mooncakes are Chinese Baked mooncakes fully packed with nuts and cranberries that takes super juicy and yummy in every bite. Being Gluten free, these Mooncakes are extremely healthy. it is a good diet in the form of dessert as there is no additional sugar added to it. I love to make these mooncakes to serve to my guests as I find these very classic.

INGREDIENTS

  • 60-gram Pepitas
  • 120 gram Honey
  • 100-gram GF rice Syrup
  • 30-gram black sesame
  • 60 gram Almond slices
  • 60-gram dried Cranberries
  • 60-gram Sultanas
  • 60-gram Walnuts
  • 50-gram Rice Bran oil
  • 20 gram Water
  • 10-gram saturated soda water
  • 200 gram GF plain Flour

Method to make the delicious Gluten Free Moon Cake

Take a clean glass bowl of medium size and pour the gram flour rice syrup into the bowl.

Add the water to the bowl. The quantity of water is 20 grams.

Stir both ingredients well together.

Then add the saturated soda water into your mixture. You also have to prepare the saturated soda water separately. Stir to dissolve.

Add the rice bran oil to your mixture and stir again.

Then you have to add the plain flour into your bowl. Stir well as the mixture gets thickened due to the addition of flour.

Knead the dough until it gets smooth.

Wrap the bowl with the plastic wrap and then let stand for 2-3 hours.

Bring all the dry fruits one by one and crush them using a knife. Cranberries, sultanas, and almonds are crushed.

Combine all the dry fruits in a separate dish and add the Pepitas to it. Also, add the sesame seeds to it. Roast them in the oven for 15-20 minutes.

Bring honey in a bowl and add all the roasted nuts into the honey.

Now put the cranberries and sultanas at the top that are uncooked.

Let the mixture stand in the fridge for half an hour and then make balls out of it. Now bring the dough and make balls of it.

Make a concave shape out of the dough ball, fill it with the prepared mixture, and then make the mooncake out of it. You can use a utensil for this purpose.

Separate the yolk of the egg and blend it with the oil. Brush it on top of the mooncakes.

Put the mooncakes in the preheated air fryer and then bake them.

Steam the cooked mooncakes and then serve.
