Gluten Free Mooncake Recipe

Ingredients

  • 60- gram Pepitas
  • 120 gram Honey
  • 100- gram GF rice Syrup
  • 30- gram black sesame
  • 60 gram Almond slices
  • 60- gram dried Cranberries
  • 60- gram Sultanas
  • 60- gram Walnuts
  • 50- gram Rice Bran oil
  • 20 gram Water
  • 10- gram saturated soda water
  • 200 gram GF plain Flour

Instructions

  • Take a clean glass bowl of medium size and pour the gram flour rice syrup into the bowl.
  • Add the water to the bowl. The quantity of water is 20 grams.
  • Stir both ingredients well together.
  • Then add the saturated soda water into your mixture. You also have to prepare the saturated soda water separately. Stir to dissolve.
  • Add the rice bran oil to your mixture and stir again.
  • Then you have to add the plain flour into your bowl. Stir well as the mixture gets thickened due to the addition of flour.
  • Knead the dough until it gets smooth.
  • Wrap the bowl with the plastic wrap and then let stand for 2-3 hours.
  • Bring all the dry fruits one by one and crush them using a knife. Cranberries, sultanas, and almonds are crushed.
  • Combine all the dry fruits in a separate dish and add the Pepitas to it. Also, add the sesame seeds to it. Roast them in the oven for 15-20 minutes.
  • Bring honey in a bowl and add all the roasted nuts into the honey.
  • Now put the cranberries and sultanas at the top that are uncooked.
  • Let the mixture stand in the fridge for half an hour and then make balls out of it. Now bring the dough and make balls of it.
  • Make a concave shape out of the dough ball, fill it with the prepared mixture, and then make the mooncake out of it. You can use a utensil for this purpose.
  • Separate the yolk of the egg and blend it with the oil. Brush it on top of the mooncakes.
  • Put the mooncakes in the preheated air fryer and then bake them.
  • Steam the cooked mooncakes and then serve.
