Gluten-free spice cake is a very soft cake, which remains soft for several days. I used very simple ingredients for this cake. If you want to fill it, a good and convenient alternative to the classic horizontal cut would be to prepare two trays with the same amount of dough, to be superimposed after the filling. In this way there is no risk of breaking a really soft and impalpable cake. Try it with currant jam, oranges, raspberries or apricots.

- 180 g of granulated sugar
- 300 grams of flour guten-free
- 1 sachet of baking powder
- 130 g of extra virgin olive oil (delicate flavor) or seed oil
- 170 grams of water
- Juice of 1 large orange
- Zest of 2 large untreated oranges
- Powdered spices of your choice (cinnamon, cloves, star anise, ginger, nutmeg, etc.)
- Powdered sugar to taste
How to make gluten free spice cake
Preheat the oven to 180 ° C. In a bowl combine the flour, sugar and baking powder. In another bowl vigorously mix the oil with the water and orange juice.
Combine the solid and liquid ingredients and mix well. Then add the orange zest and spices to your taste. I opted for a couple of cloves, well crushed, 1 teaspoon of cinnamon and one of ginger, plus a touch of nutmeg.
Once the mixture is smooth and homogeneous, pour it into a 22 or 24 cm pan lined with parchment paper. Place in the oven and cook for about 40 minutes, checking the doneness with a toothpick which must come out completely dry.
Let it cool completely.
Before serving, sprinkle the surface with icing sugar.
