How to make chicken parmesan
PREPARE THE PARMIGIANO CREAM
Put the butter in a saucepan and let it melt. Add the flour and toast it for a few minutes with the butter.
Add the milk, stirring well with a spoon or spatula or a hand whisk so that no lumps form.
Cook for 5 minutes; stir continuously until the sauce begins to thicken.
Add the grated Parmesan and let it melt with the heat of the cream, continuing to stir.
When the Parmesan cream is ready, season with salt and set aside covered with cling film.
PREPARE THE CHICKEN BREAST
Put butter in a large pan and let it melt.
Flour the slices of chicken breast and cook them in the pan with the butter for 5 minutes per side.
Lightly salt the chicken breast.
Add the parmesan cream in the pan with the chicken breast to cover it entirely and cook until the chicken is cooked and the cream is reduced.
Serve the chicken with Parmesan hot with a sprinkling of pepper.
