Sweet Potato Jacks Recipe

Sweet Potato Jacks have been a favorite dessert snack in my family for several years. Even my father used to love these potato pies when these are served at breakfast or lunch. These sweet potato jacks when served with the confectioners’ sugar or sugar powder sprinkled over them look more classy and mouth-watering.

Sweet Potato jacks are treated to all toddlers as they would love its super sweet and soft flavor. You can make plenty of them and stir them in the fridge for a few days.

INGREDIENTS

  • 3/4 cup milk
  • 1/2 cup shortening
  • 3 tablespoon sugar
  • 2 large eggs at room temperature
  • 4 1/2 cups self-rising flour

Filling for the Jacks

  • Oil for frying
  • Confectioner’s sugar for sprinkling
  • 1 cup sugar
  • 1/2 tablespoon vanilla extract
  • 1 large egg
  • 1 1/2 tablespoons all-purpose flour
  • 2 tablespoons melted butter

Method to make Sweet Potato Jacks Recipe

  1. Take a large-sized bowl and add flour to this bowl. Mix the sugar with this flour with the spatula or hand whisk.
  2. Add the shortening after making crumbs out of it. On a separate plate as you have already beaten an egg, pour milk into this beaten egg and whisk well.
  3. Put it in the refrigerator for a few hours while covered.
  4. Then take another bowl and you have to add the other ingredients to prepare the filling for your potato jacks.
  5. Combine one cup of sugar with a beaten egg and pour vanilla extract into it.
  6. Bring the melted butter and add to it. Add the all-purpose flour and then stir everything well.
  7. Make circles out of this dough and then bring the filling to stuff each circle with it. Then fold this circle in a half.
  8. The potato jacks are filled this way.
  9. Then bake these jacks in the preheated oven at a temperature of 375 degrees. You can also use an electric skillet for this purpose at the same temperature.
  10. Once cooked, your potato jacks are ready to serve.
