Quick and Easy Taco Soup Recipe

Taco soup is an ultra-simple recipe for a complete dish, comforting, healthy and rich in taste. This taco style soup is served hot with tortilla bread is a pure delight.

This taco style soup recipe is super tasty and easy to make, it can be prepared in 10 minutes and cooked in 30 minutes. This recipe contains vegetables and protein, so it’s consistent.

Ingredients

  • 500 g of ground beef
  • 1 white onion, chopped
  • 1 red pepper, finely diced
  • 1 tablespoon of tomato paste
  • 2 tablespoons Mexican spice blend
  • 1 can canned red beans, drained and rinsed
  • 1 can of canned corn, drained and rinsed
  • 1 can of canned diced tomatoes
  • 1 green chili, diced (if you like spiciness)
  • 2 cups of water
  • 2 tablespoons of olive oil

How to make taco soup

In a Dutch oven or large saucepan over medium heat, cook the ground beef in two tablespoons of olive oil until seared.

Add the diced onion, bell pepper, spices and tomato paste. Mix all the ingredients for 1 to 2 minutes to blend them together.

Add the kidney beans and corn, drained and rinsed. Then add the diced tomatoes, the diced green pepper mix everything.

Add water then bring to a boil and cover. Simmer on lower heat for 30 minutes until the sauce reduces.

To serve, pour the taco soup into deep plates. Then add your favorite garnishes, slices of red onion, slices of green pepper, cherry tomatoes, coriander leaves, diced avocado, cheese, cream etc.

Serve taco soup with tortilla bread.
