Alvin's Drunken Chicken Recipe

Ingredients

  • Finely sliced Ginger
  • 1 tablespoon sugar
  • 1 Whole chicken
  • 2 spring onions or scallions
  • 2 tablespoon sea salt
  • 1/4 cup Gogi berries
  • 8 Chicken Stock Cubes
  • Coriander leaves for sprinkling
  • 1 cup Chinese Shaoxing

Instructions

  • First of all, slice the chicken into the required sizes.
  • Then bring a large-sized pot and add chicken to it. Add ginger and onion to the pot. Also, add spring onions at the same time.
  • Pour water into the pot. Cook at medium heat and then wait for it to get boiled. It will take almost 20 minutes.
  • Next, turn off the heat and remove the carcass from the cooking pot. Then add the chicken pieces and Gogi berries into the cooking pot.
  • Simmer the mixture and let stand for more than 15 minutes.
  • Bring a bowl and pour the Shaoxing into it. Then add sugar and salt to it. Pour the cooked chicken broth into the bowl and then let it stand.
  • Take a separate bowl and make an ice bath in it by adding ice and cold water to this bowl. Bring the chicken and add it to this ice bath.
  • Then you have to slice the chicken. Put the chicken slices in a separate bowl. Now pour the sugar and Shaoxing mixture into the chicken.
  • Mix well. Sprinkle the coriander leaves on top of it, and then serve your chicken.
