California Pizza Kitchen Butter Cake Recipe

Ingredients

  • 2 sticks unsalted butter
  • 1 cup sugar
  • 1 1/2 cup flour
  • 1 teaspoon baking powder
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 1 cup buttermilk

Instructions

  • Preheat oven at 375F. Line a 9-inch baking cake pan with parchment paper and butter the sides and bottom. Sprinkle some sugar on the sides and bottom of the pan.
  • Add butter and sugar to the bowl of a stand mixer and beatuntil fluffy. Add the flour and baking powder gradually and mix until it is well combined.
  • Add eggs one by one and beat again. Add vanilla, almond extract, and buttermilk and beat until the batter is light and fluffy.
  • Transfer the batter to the cake pan. Bake for 50 minutes until the cake is golden brown.
  • Let the cake cool for 5 minutes. Then remove it from pan and place it on the cooling rack.
  • Serve this delicious butter cake with vanilla ice cream.
