Instructions
Prepare the Chicken:
Begin to cook the chicken breast until it is all the way cooked and not pink in the middle. You can cook the chicken by boiling it, baking it, grilling it, or using leftover chicken for this recipe. After you cook the chicken, let it cool a little bit before cutting it into small pieces.
Mix the Dressing:
In a little bowl, mix mayonnaise, Greek yogurt, lemon juice, honey, salt, and pepper until they are well combined. Taste the food and add more seasoning if needed.
Combine Ingredients:
Put the diced chicken, dried cranberries, chopped walnuts, celery, and red onion in a big bowl and mix them. Mix the ingredients gently until they are evenly spread out.
Add the Dressing:
Use a spoon or spatula to carefully mix the dressing into the salad until everything is covered. Be careful not to squish the things you are mixing.
Chill and Serve:
Put plastic wrap on top of the bowl or put the salad in a container that closes tightly. Put the Cape Cod Chicken Salad in the fridge for 30 minutes so the flavors mix. After it's been cooled, you can eat the chicken salad on top of lettuce, in a sandwich, or with your favorite meal.
