Caprese Pasta Salad Recipe Rachael Ray

Ingredients

  • 2 pounds tomatoes chopped
  • 2 cloves garlic chopped
  • 2 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • Sal to taste
  • Pepper to taste
  • 1 pound short-cut pasta
  • 1 ball fresh mozzarella diced
  • 1/2 cup mayo
  • 20 leaves of basil torn
  • Parmesan cheese for topping

Instructions

  • For making your favorite Caprese Pasta, take a medium-sized bowl and start mixing the mentioned ingredients one by one.
  • Mix the chopped tomatoes with garlic and red wine vinegar.
  • Then add olive oil, 1 tbsp salt, and 1/2 tbsp pepper. Also, drop some olive oil.
  • Cover the bowl with a lid or a paper rap and let the mixture settle for at least 1 hour.
  • Boil pasta in a large skillet filled with salted water. After it is cooked, drain.
  • Add the cooked pasta to the tomato bowl. Mix well. Once the pasta mixture is cooled down, mix the shredded mozzarella cheese with it.
  • Throw in the torn basil leaves.
  • Before we top our Pasta, get it out in a serving dish. Now top it with some mayo and the grated Parmesan Cheese and Serve with a fork.
