First of all prep all your vegetables and seasonings so that you can easily perform while cooking.
Dice vegetables like onion, carrots, and celery, and mince the garlic cloves.
Take a soup pan or simple large-sized pot and drop the olive oil into it. Add the diced carrots which are then showered with salt and Pepper.
Stir fry the veggies until these turn to be soft. Now fill this vegetable pot with 12 cups of water. Also, put the chicken in this pot.
Wait for the soup to get boiled. You should simmer it for 2 hours. The chicken is completely tenderized. Take it out of the soup and let it cool.
Shred the chicken or dice it into smaller cubes and then return to the soup.
Now in the pot, put chicken bouillon cubes and bay leaves. Also, sprinkle parsley in the soup. Boil the soup once again.
Now add the boiled egg noodles to the simmering soup. Cook for another half an hour.
Serve after adjusting seasonings like salt and pepper.
