Ingredients

  • Fish sauce for flavor
  • Freshly chopped spring onions
  • 6-8 cups of soup base
  • 300- gram assorted fish cakes or fish balls
  • Fried garlic crispy texture
  • 250- gram fresh yellow noodles

Ingredients for soup Base

  • Freshly grounded black pepper to taste
  • Salt to taste
  • 4 cups chicken stock
  • 3 stalks chopped spring onion
  • 6 tablespoons fried onion crispy enough
  • 2 cups shrimp stock

Instructions

  • As the instructions are always present on the packet of noodles, you should follow them and boil the noodles.
  • Then bring a cooking pot and prepare the soup base first. Pour the chicken stock into the soup and add the diced onion to this simmering stock. After adding the onions you must add the seasonings.
  • The seasonings include salt and pepper which are to be added to the soup. Adjust quantities according to your own choice.
  • In the end, you must pour the shrimp stock into the already simmering soup. As you already know, we have seasoned the mixture, you have to simmer it as long as you want it to be thick.
  • Simmering helps the soup to get thick and to get the required consistency which is not too liquidy nor too thick.
  • After simmering for 8-10 minutes, the soup base is ready.
  • Then to complete the soup recipe, you must transfer this soup base to the deep pot. Bring the fish balls and put them in the soup base pot.
  • In the next step, you must put the fish cakes in the soup pot. Let them simmer all together in the pot.
  • Keep the heat lower and the simmering duration will be almost 20 minutes.
  • Bring the cooked noodles and put them in the same cooking pot. Then after a few minutes, remove the pot from the heat and transfer the cooked soup to the serving bowls.
  • Chop the spring onions and spread them at the top of the poured soup in the bowls.
  • Bring the fried garlic and also sprinkle it at the top.
  • Bring the fish sauce, drizzle it into the soup bowl and serve the soup while hot.
