Ingredients

  • 1 pound of protein chicken, beef, shrimp, or tofu
  • 1 large onion finely chopped
  • 2 carrots finely chopped
  • 2 potatoes peeled and diced
  • 3 cloves garlic minced
  • 2 tablespoons vegetable oil
  • 4 cups water
  • 1 package of Coco Ichibanya Curry Roux available at Asian grocery stores or online
  • Salt and pepper to taste
  • Hot cooked rice

Instructions

  • Prepare Your Protein: Cut the protein into bite-sized pieces and season with a pinch of salt and pepper.
  • Sauté the Onion and Garlic: In a large pot, heat the vegetable oil over medium heat. Add the finely chopped onion and minced garlic. Sauté until they become soft and fragrant.
  • Add Vegetables: Add the carrots and potatoes to the pot and continue to sauté for a few minutes until they start to soften.
  • Curry Roux: Pour in the water and bring it to a boil. Once boiling, reduce the heat to low and add the Coco Ichibanya Curry Roux to the pot. Stir until the roux is fully dissolved and the curry thickens.
  • Simmer: Gently add your protein of choice to the pot, making sure it's submerged in the curry sauce. Let it simmer on low heat for about 20-30 minutes, or until the protein is cooked through and the vegetables are tender.
  • Serve: Serve your Coco Ichibanya Curry hot over a bed of steamed white rice. Feel free to top it with a soft-boiled egg, pickles, or additional spices if desired.
