Ingredients

  • 250 g Flour
  • 50 g Maizena
  • 150 g Sugar
  • 300 g Pumpkin
  • 50 g Butter
  • 3 eggs
  • 1 sachet Baking powder for cakes
  • Powdered sugar to taste

Instructions

  • First peel the pumpkin and cut it into small cubes. Cook the pumpkin in a pan with a knob of butter for 10 minutes or bake it in the oven without butter for about 20 minutes at 200 °.
  • Once the pumpkin is cooked, blend it with the blender and keep it aside.
  • Add the eggs and sugar in a bowl and whisk them well with the electric whisk until the mixture is frothy and whitish.
  • Add the softened butter and, continuing to whisk, add thepureed pumpkin pulp and, little by little, the sifted flour and cornstarch.
  • Now finally, add the baking powder and mix until a smooth cream is obtained.
  • Put the pumpkin pie dough to bake in a preheated oven at 160° for about 45 minutes until it is cooked and golden on the surface.
  • Before taking out of the oven always do the toothpick test to check the internal cooking of the cake.
  • When the pumpkin pie is completely cooled, sprinkle it with plenty of icing sugar.
