First peel the pumpkin and cut it into small cubes. Cook the pumpkin in a pan with a knob of butter for 10 minutes or bake it in the oven without butter for about 20 minutes at 200 °.
Once the pumpkin is cooked, blend it with the blender and keep it aside.
Add the eggs and sugar in a bowl and whisk them well with the electric whisk until the mixture is frothy and whitish.
Add the softened butter and, continuing to whisk, add thepureed pumpkin pulp and, little by little, the sifted flour and cornstarch.
Now finally, add the baking powder and mix until a smooth cream is obtained.
Put the pumpkin pie dough to bake in a preheated oven at 160° for about 45 minutes until it is cooked and golden on the surface.
Before taking out of the oven always do the toothpick test to check the internal cooking of the cake.
When the pumpkin pie is completely cooled, sprinkle it with plenty of icing sugar.
