Ingredients

  • 1/2 cup all-purpose flour
  • 1 tablespoon minced fresh Parsley
  • 4 3-4 ounces fresh sole fillets
  • 6 tablespoons unsalted butter
  • Kosher salt to taste
  • 1 tablespoon grated lemon zest
  • Freshly grounded black pepper
  • 6 tablespoons fresh lemon juice

Instructions

  • In the beginning, preheat the microwave oven. The temperature for this preheating is 200 degrees which is exactly suitable for your dish.
  • Take a bowl, which is a mixing bowl of suitable size, and then sift the flour into this bowl. In the flour bowl, add some salt and also mix the black pepper into it.
  • Then bring the fillets, clean them and dry them with paper towels. Make sure that you have dried them properly.
  • Then to coat the fillets, you must use salt for sprinkling on one side. Then take a non-stick pan and add butter to this pan. Once the butter is melted and heated enough, start adding the fillets into it.
  • Cook the fillets at the lowered heat, and sear them in the heated oil. After cooking for some time, flip it.
  • Cook from both sides until it changes color and is well browned. In between the cooking of these fillets, you must pour some lemon juice into them.
  • The addition of lemon zest should also be done at this point. Now take the fish fillets out of the heated oil and put them in the heat-safe plates or dish.
  • Repeat the process with all the fillets and then you must serve these fillets while hot.
  • Before serving the fillets, bring the freshly chopped parsley over it and also sprinkle some more salt along with the pepper for the final flavor.
  • Serve as it is on the platter.
