Japanese Fruit Pie Recipe

Ingredients

  • 1 tablespoon vanilla
  • 1/2 cup raisins
  • 1 cup boiling water
  • 1 cup granulated sugar
  • 2 large sized eggs
  • 1/2 cup pecans chopped
  • 1/2 cup sweetened shredded coconut
  • 9- inch pie crust unbaked
  • 1/2 cup salted or unsalted butter at room temperature

Instructions

  • In a small-sized bowl, put all the raisins. Fill the raisin bowl with hot boiling water so that all the raisins are dipped in this water.
  • Keep the raisins dipped in the water for 10-15 minutes.
  • The oven is getting preheated at a suitable temperature of 350 degrees.
  • In a mixing bowl, cream the butter using a mixer and also mix sugar with it. You can either use the hand mix or the electric blender.
  • Once done, break the eggs into the mixture. And beat well. Eggs should be properly blended and incorporated in a good manner with the rest of the mixture.
  • Then it's time to add the remaining ingredients. Pour some vanilla and chopped pecans into it. Stir to combine.
  • I think we are done with all the ingredients. Oh, wait. Please don't forget to add the shredded coconut.
  • Top your mixture with this shredded coconut and then pour the mixture into the unbaked ready-made pie crust.
  • Put the stuffed fruit pie crust into the preheated oven and start baking. The baking period will be about 40 minutes.
  • Once baking is done, take out, let the fruit pie cool down and then refrigerate before serving for a few hours so that it will settle and develop the final taste.
