Jason's Deli Tomato Basil Soup Recipe

Ingredients

  • Unsalted butter
  • 2 tbsp olive oil
  • 5 Minced garlic cloves
  • 1 medium-sized onion
  • 2 cup tomato paste
  • 1 can ground peeled tomatoes
  • 5 cups vegetable stock or cocktail
  • 1 cup fresh thinly sliced basil
  • 1 cup heavy cream
  • 1 can chicken broth
  • 2 tbsp coriander leaves
  • Salt and pepper as per requirement

Instructions

  • In a large pan, heat up the olive oil.
  • Fry onion and minced garlic in it until it becomes translucent. Do not burn the garlic.
  • Then add the canned whole tomatoes to it and stir well, after adding the chicken broth. Mix and bring it to a boil. Then let it simmer for some time.
  • The chicken broth is important to make your soup flavorful and tasty. Add a can of chicken broth.
  • Cook for a pretty long time after adding the tomato paste to it. Add the spices. Stir in the basil to pour its relish.
  • Throw in the tomato paste mixed with heavy cream. Turn off the heat after cooking for 5 more minutes.
  • In the end, blend your soup in an immersion blender to make it creamy and Serve Immediately by sprinkling some coriander leaves.
