Ingredients

  • 1 tablespoon Kadyo Sesame Oil
  • 1 tablespoon Vegetable Oil
  • 3 cloves garlic
  • 2 tablespoons fresh ginger
  • 1 tablespoon Pineapple Juice
  • 3/4 lb boneless skinless chicken breast
  • 1/3 cup La Choy Lite Soy Sauce
  • 1 medium-sized pineapple
  • 3 tablespoons fresh ginger

For the Jerk Marinade

  • Sesame seeds to garnish
  • 2 tablespoon cornstarch
  • Thinly sliced green onions
  • 2 cups cooked Rice
  • 2 tablespoon water

Instructions

  • Firstly you have to slice the pineapple in two halves. Then you must make cuts and take out all the flesh from the pineapple halves.
  • Take a small sized mixing bowl, and pour some soy sauce into this bowl.
  • Mix pineapple juice with the soy sauce and then add the minced garlic to the mixture.
  • Mix the ginger into it and then pour the sesame oil into it. Stir everything well into it.
  • In the meantime bring the cleaned chicken and sprinkle salt over it for the purpose to season it.
  • Then bring a large-sized cooking skillet, and pour the vegetable oil into it for heating.
  • Then at the flour of the skillet make a layer of the seasoned chicken. Start cooking at medium flame and also don’t forget to flip the chicken to cook it from all sides.
  • Bring the prepared sauce and pour it over the cooking chicken. Wait for the sauce to boil with the chicken in it.
  • Then to make the sauce a  little bit thickened, you must add the water and cornstarch slurry to the sauce. The cooking of 10-12 minutes will get you the required thickened sauce.
  • Your chicken is ready to serve. Transfer the cooked saucy chicken into serving bowls and then top these bowls with the reserved pineapple.
  • Also, sprinkle the sesame seeds and chopped green onions over them.
