Ingredients

  • Salt and freshly grounded black pepper
  • 2 tablespoons freshly chopped flat-leaf parsley
  • 2 tablespoon freshly chopped cilantro leaves
  • 8 cups cubed and toasted cornbread
  • 1/2 pound diced meat like ham optional
  • 2 cups chopped yellow onions
  • 2 cups fresh corn kernels
  • 2 tablespoons minced garlic
  • 1 cup diced red pepper
  • 2 medium-sized eggs
  • 3 cups chicken stock
  • 1/2 cup heavy cream
  • 1 cup chopped celery
  • 4 tablespoon butter

Instructions

  • The oven is needed to be preheated at 370 degrees. This is a suitable temperature for your stuffing.
  • In a saucepan add the butter and melt it at low heat. Dice the vegetables and stir in the butter as you need the softened vegetables for your stuffing.
  • Wait for them to get tenderized. Add the meat like ham to your vegetables. Cook until tender. Simmer at lowered heat for a few minutes.
  • Let the cooked meat and veggie mixture get air cooled for some time.
  • In a separate bowl prepare the seasoning for your stuffing. Break the eggs into the bowl and pour the stock into it. Make sure the bowl is large enough to occupy all the ingredients.
  • Pour the cream into them and blend well. Then you have to add the herbs to the mixture. Blend well and then sprinkle salt and pepper into it.
  • Take a baking pan and use cooking spray or oil to grease it for further baking. Add the cornbread, the cooked vegetable and meat mixture, and the prepared blend into the pan.
  • Make a smooth layer from the top. Bake this stuffing for half an hour while covered from the top.
  • Then remove the cover from the top and bake again for 15-20 minutes until you get the required color.
  • Serve while Hot!
