Ingredients

  • 200 g stale ciabatta loaf
  • 600 g ripe mixed tomatoes roughly chopped
  • Sea salt to taste
  • Freshly ground black pepper
  • 1 handful of small capers
  • 1 small onion peeled and finely sliced
  • 280 g jarred red pepper roughly chopped and drained
  • 8 anchovy fillets in oil finely sliced
  • 1/2 cup vinegar
  • Extra virgin olive oil
  • A pinch of oregano
  • A bunch of fresh basil

Instructions

  • Use the cutting slide and the knife to chop or tear the ciabatta and set it aside for half an hour.
  • Make sure in this time, it dries out.
  • Take a bowl and season tomatoes in this bowl using slat and pepper. Further, drain the capers and rinse. Squeeze these capers to remove any excess liquid and then add them into the tomato bowl.
  • Secondly add peppers, onions, ciabatta, and anchovy fillets.
  • Toss the mixture using a medium-sized spatula or simply using your hands.
  • In the next step add the extra virgin olive oil and vinegar.
  • Taste your salad and if needed add more salt and pepper. You can also add more olive oil or vinegar.
  • Shower a pinch of oregano in your salad.
  • To complete the process of making your salad, tear the basil leaves and add in the rest of the salad mixture.
  • Stir the salad well and Serve!
  • You can serve it with roasted chicken, beef, or barbecued meat.
