Pollo Tropical Black Beans Recipe

Ingredients

  • 1 small-sized onion chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon cumin
  • A drizzle of olive oil
  • 2 tablespoon chipotle powder
  • 1 cup broth or stock
  • 3 cups cooked rice
  • 3/4 cup roasted red pepper chopped
  • 4 cups cooked black beans
  • 1 cup smoked meat chopped
  • 1 tablespoon agave syrup
  • 1 tablespoon lime juice
  • 1/3 cup fresh orange juice

For Garnishing

  • 1 mango peeled and diced
  • 1 diced Avocado
  • Chopped cilantro for garnishing
  • Few lime wedges
  • 2 Chopped scallions

Instructions

  • On medium heat, drizzle the coconut oil or olive oil in the pan and stir fry onion and garlic into it.
  • You have to fry the onion until it is softened enough.
  • To season the onion and garlic, add some cumin and sprinkle the chipotle powder. You have to saute the mixture for a few minutes.
  • Pour the broth into the mixture and also add the juices like the lime and orange juices. Add some agave syrup and then add in the meat.
  • Saute and cook the meat well in the mixture. Add in the beans and then add the roasted pepper.
  • Simmer the whole mixture for 15-20 minutes.
  • Now bring your cooked rice, serve them on a plate and then put the black beans over them. Top the platter with lime wedges, avocado, cilantro, and scallions.
  • Everything should be perfect on your serving platter.
