On medium heat, drizzle the coconut oil or olive oil in the pan and stir fry onion and garlic into it.
You have to fry the onion until it is softened enough.
To season the onion and garlic, add some cumin and sprinkle the chipotle powder. You have to saute the mixture for a few minutes.
Pour the broth into the mixture and also add the juices like the lime and orange juices. Add some agave syrup and then add in the meat.
Saute and cook the meat well in the mixture. Add in the beans and then add the roasted pepper.
Simmer the whole mixture for 15-20 minutes.
Now bring your cooked rice, serve them on a plate and then put the black beans over them. Top the platter with lime wedges, avocado, cilantro, and scallions.
Everything should be perfect on your serving platter.
