Ingredients

  • 1 tablespoon dry active yeast
  • 1/4 cup warm water
  • 5 tablespoon unsalted butter
  • 3/4 cup milk
  • 1/3 cup canned pumpkin
  • 1/3 cup prune plum filling
  • 1/3 cup granulated sugar
  • 1 tablespoon molasses
  • 1 tablespoon honey
  • 1 tablespoon salt
  • 1 1/2 tablespoon ground cinnamon
  • 2 large eggs beaten
  • 1/4 cup pecan meal
  • 8 tablespoon Vital wheat gluten
  • 2 cups all-purpose flour
  • 2 cups bread flour
  • 2-3 tablespoons melted butter

Fruits and Nuts

  • 1 cup chopped walnuts
  • 1/4 cup chopped dried apples
  • 1/4 cup dried cherries
  • 1/4 cup dark raisins
  • 1/4 chopped dry apricots
  • 1/4 cup golden raisins
  • 1/4 cup cranberries

Instructions

  • Combine the dry fruits in a bowl and then bring the warm water to soak these mixed dry fruits in it.
  • Soak for at least 20 minutes.
  • Take a large-sized bowl and pour warm water into it. In this warm water add the yeast.
  • Also in a separate pan or container mix the bread flour with all-purpose flour and set it aside.
  • Put a small-sized saucepan on the stove and turn low heat under it. Melt the butter in the saucepan and then after removing it from the heat pour milk into this melted butter.
  • Now mix this milk puree with the dissolved yeast mixture.
  • Once both the mixtures are combined one by one add the rest of the ingredients in it.
  • Put in the canned pumpkins and then add the plum filling in it. Pour sugar and honey into it. Moreover add salt, molasses, beaten eggs, pecan meal, and wheat gluten to the mixing bowl.
  • Take a hand mixer and whisk well until a well-consistent mixture is formed.
  • We have a few ingredients left which are also to be added to the mixture.
  • Make additional 3-4 cups of flour in the mixture mix well and knead the dough whose texture should be soft and smooth.
  • Increase or decrease the quantity of flour according to the need.
  • Put the kneaded dough in a bowl that is already greased and let stand the dough in this greased bowl for an hour in a warm place so that it will rise.
  • Combine the nuts and fruits. Take load pans and grease them.
  • Lightly flour a surface and put the dough on it. Divide the dough into halves and then sprinkle each half with the nuts and fruits. Again knead the sprinkled halves of the dough separately.
  • Shape the dough into bread loaves and put it in the loaf pan for further baking.
  • To grease again, brush the melted butter on the top layer of the dough.
  • Let it stand for one more hour and then again brush butter over it. Put the pans in the preheated oven whose temperature is set at 350 degrees.
  • Use the foil sheet to cover the dough if its crust gets browned too fast.
