To make the chicken salad, start by chopping the meat with a knife: the pieces and the pieces obtained do not necessarily have to be all the same size. Wash and dry the celery, remove any filaments and then cut it into small pieces.
Wash and dry the lettuce leaves. Collect the chicken and the chopped celery in a large salad bowl.
Cut the lettuce into strips and add it to the chicken with celery. Prepare the mayonnaise with a single egg, and keeping it rather liquid. Spread it over the salad.
Add the black olives, capers if you like and mix well and season with salt and freshly ground pepper. Serve your chicken salad right away.
