Ingredients

  • 500- gram bread flour
  • 9-12 gram acceptable sea salt
  • 50-100 gram bubbly active starter
  • 375 grams of warm water

Instructions

  • Take a large bowl and pour water into it. Add the starter into it and blend well. Then, you must add flour into the same bowl and add salt. Stir well and then let stand for half an hour while covered.
  • After about half an hour, stretch the dough repeatedly from different positions and make folding out of it. Repeat the process.
  • Then you must again keep the dough for 10-12 hours for fermentation. Keep it covered with a damp towel for the better rising of the dough. This will result in the bulk fermentation of your dough.
  • In the next step, you have to shape your dough. Flour a flat surface and put the dough on this surface. Then push and pull the dough from the top down to the center and turn it. Repeat the process to get the required texture of the dough.
  • Then keep the dough for another half an hour. Take a bowl and spread a towel into it. Sprinkle the flour all over it. Shape the dough using your hands and then put it in your bowl.
  • Cover the top of the bowl and then put the dough in the refrigerator for one hour at least. This will help again in the rising of the dough.
  • You have to preheat your Dutch oven to a suitable temperature. This temperature is 550 degrees. Then line the parchment paper in the baking pot.
  • Put the dough on the parchment paper of the preheated oven bowl. Then put the dough into the oven for baking, and remember to lower the oven temperature to 400 degrees. Bake for 15-20 minutes, then put the dough on the cooling rack.
  • Slice the dough after one hour of cooling. Then you can use sourdough.
