Ingredients

  • 2 cups all-purpose flour
  • 1 cup whole heat or whole flour
  • 1 1/2 tbsp fine sea salt
  • 1 tbsp ground cinnamon optional
  • 1/2 teaspoon instant yeast
  • 1/3 cup grated carrot
  • 1/3 cup dried fruit of choice finely chopped berries or golden raisins
  • 1/4 cup raw sunflower seeds
  • 1/4 cup raw pumpkin seeds
  • 1 1/2 cups room temperature water

Instructions

  • To begin your recipe, whisk together all-purpose flour, wheat flour, salt, cinnamon, and yeast in a large bowl.
  • Then in this flour mixture add the chopped dried fruit, sunflower seeds, grated carrot, and pumpkin seeds. Also pour in some water.
  • Stir this dough well. You may use a spatula to stir the mixture.
  • The texture of the dough will be dry and rough. That is okay. It will get hydrated when you will left it overnight.
  • On next morning, preheat the oven for an hour. In the meantime, shape your dough. Sprinkle a surface with flour and then shape the dough by placing it on the sprinkled flour. You can use a rolling pin for this purpose.
  • After shaping dough, put it on the parchment paper. Put some seeds on the exterior of the shaped bread.
  • Carefully transfer your bread dough to the oven. Spray some mist of water and close the oven.
  • Bake the dough. Bake it for 30 minutes. Open the lid of the oven and check. Bake until you get a brown color at the top.
  • Let the bread get air cool before slicing. It will take an hour or two.
  • Then in the end slice the bread.
